Ingredients

  • 2 cups shredded zucchini (well drained)
  • 1 teaspoon fine sea salt
  • 1/4 cup coconut flour
  • 2 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup finely chopped yellow onion
  • 1 teaspoon smoked paprika
  • Optional: extra cheese, herbs, or cooked bacon

Instructions

  • Preheat oven to 400°F (200°C)
  • Combine shredded zucchini with salt and let sit for 10–15 minutes
  • Squeeze out excess moisture using a towel
  • Mix zucchini with coconut flour, eggs, cheese, onion, and paprika
  • Grease a mini muffin pan and fill each cup with mixture
  • Bake for 15 minutes until golden and crispy
  • Let cool slightly before removing and serving

Notes

Drain zucchini thoroughly for best texture
You can swap cheddar with mozzarella or Parmesan
Reheat in the oven to keep crispiness
