Ingredients

  • 1 sweet potato, peeled and cubed
  • 1 tbsp olive oil
  • salt and black pepper
  • smoked paprika
  • 1/2 lb ground beef
  • garlic powder
  • chili flakes
  • 3/4-1 cup cottage cheese
  • hot honey
  • green onions or cilantro
  • pepitas or nuts for crunch
  • optional avocado or lime wedge

Instructions

  • Preheat oven to 425°F (220°C). Toss cubed sweet potatoes with olive oil, salt, pepper, and smoked paprika, then spread on a baking sheet.
  • Roast for 20 to 30 minutes, flipping once, until tender and caramelized on the edges.
  • In a skillet over medium-high heat, cook ground beef with salt, pepper, garlic powder, and chili flakes until browned.
  • Scoop cottage cheese into a bowl and season lightly with salt and pepper.
  • Add roasted sweet potatoes and cooked beef on top of the cottage cheese.
  • Drizzle with hot honey and top with herbs and crunchy toppings before serving.

Notes

Roast sweet potatoes until caramelized for best flavor. Keep cottage cheese cold for contrast with warm toppings. Add hot honey gradually to control sweetness and heat. Add crunchy toppings just before serving to maintain texture.
