20Oreo cookies, crushed
4tbspunsalted butter, melted
16ozcream cheese, softened
2largeeggs
1tspvanilla extract
0.25cupcocoa powder
0.5cupgranulated sugar
1cupmini marshmallows
2tbspchocolate syrup or drizzle
Instructions
Preheat oven to 325°F (163°C). Line an 8x8 baking dish with parchment paper.
Mix crushed Oreos and melted butter. Press firmly into pan for crust.
In a bowl, beat cream cheese until smooth. Add eggs, vanilla, sugar, and cocoa powder. Mix until creamy.
Pour filling over crust and smooth top. Bake for 35 minutes or until set.
Cool completely, then top with mini marshmallows and drizzle with chocolate syrup.
Chill at least 2 hours before slicing into 9 bars.
Notes
Chill completely before slicing for clean edges. You can use crushed candy canes for a peppermint version. Store in the fridge for up to 5 days, or freeze for up to 1 month.
