Hot Cocoa Cheesecake Bars

Creamy hot chocolate cheesecake bars on a buttery Oreo crust, topped with gooey marshmallows and chocolate drizzle, a cozy holiday dessert inspired by a warm cup of cocoa.

Ingredients

  • 20 Oreo cookies, crushed
  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.25 cup cocoa powder
  • 0.5 cup granulated sugar
  • 1 cup mini marshmallows
  • 2 tbsp chocolate syrup or drizzle

Instructions

  • Preheat oven to 325°F (163°C). Line an 8x8 baking dish with parchment paper.
  • Mix crushed Oreos and melted butter. Press firmly into pan for crust.
  • In a bowl, beat cream cheese until smooth. Add eggs, vanilla, sugar, and cocoa powder. Mix until creamy.
  • Pour filling over crust and smooth top. Bake for 35 minutes or until set.
  • Cool completely, then top with mini marshmallows and drizzle with chocolate syrup.
  • Chill at least 2 hours before slicing into 9 bars.

Notes

Chill completely before slicing for clean edges. You can use crushed candy canes for a peppermint version. Store in the fridge for up to 5 days, or freeze for up to 1 month.
