Preparation
Warm the olive oil in a big pot over medium heat. Add onion and cook for about 4 to 5 minutes until it softens.
Add garlic and stir for 30 seconds, just until it smells good.
Add the ground turkey and break it up with your spoon. Cook until it is no longer pink, about 6 to 8 minutes.
Stir in chili powder, cumin, smoked paprika, salt, and pepper. Let the spices toast for about 30 seconds.
Add pumpkin puree, diced tomatoes, white beans, and broth. Stir well so the pumpkin blends in.
Bring it to a gentle simmer. Let it cook for 15 to 20 minutes, stirring occasionally.
Taste and adjust seasoning. Add cayenne for more heat and apple cider vinegar for more depth. If it's too thick, add more broth.
Let it sit for 10 minutes before serving to enhance flavors.
Notes
Leftovers are great; store in an airtight container for up to 4 days. For freezing, keep in single portions to grab for lunch. If reheating, add a splash of broth if it thickens too much.
