High Protein Chicken Parmesan Casserole

A hearty, high protein chicken parmesan casserole made with baked chicken, broccoli, rigatoni, and gooey cheese perfect for meal prep or family dinners.

Ingredients

  • 1 lb rigatoni
  • 6 cups chicken nuggets or chicken tenders
  • 2 tbsp olive oil
  • 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • 5 cups chopped broccoli
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 48 oz pasta sauce
  • 3 cups shredded mozzarella
  • 1/2 cup parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 3 tbsp melted butter
  • 1 tsp Italian seasoning (for topping)
  • Fresh basil for garnish

Instructions

  • Preheat oven to 375°F and cook pasta according to package.
  • Cook chicken tenders, then cut into bite-size pieces.
  • In a pan, heat olive oil and sauté onion and garlic.
  • Add broccoli, seasoning, salt, and pepper. Stir for 3–4 minutes.
  • Pour in sauce and simmer for 10 minutes.
  • Add noodles, mozzarella, and parmesan. Stir until coated.
  • Layer noodles and chicken in casserole dish, top with remaining sauce and cheese.
  • Mix topping ingredients and sprinkle evenly.
  • Bake 25–30 minutes or until bubbling; broil 2 minutes for golden top.
  • Garnish with basil and serve warm.

Notes

Store leftovers in airtight containers for up to 4 days. Reheat in the oven or air fryer to keep the crispy top.
