Ingredients
2tbspolive oil or butter
1smallonion, diced
2clovesgarlic, minced
1tspfresh sage, chopped (plus extra for garnish)
1canpumpkin purée (15 oz) or 2 cups roasted pumpkin
3cupsvegetable or chicken broth
½cupheavy cream or coconut milk
½tspground nutmeg
Salt and black pepper, to taste
Optional garnish: crispy sage leaves and cream drizzle
Instructions
In a large pot, heat olive oil over medium heat. Sauté onion and garlic until softened, about 5 minutes.
Add chopped sage and pumpkin purée. Stir and cook for 2 minutes to deepen flavor.
Pour in broth and bring to a boil. Reduce heat and simmer for 10 minutes.
Blend the soup using an immersion blender or transfer to a blender in batches until smooth.
Stir in cream, nutmeg, salt, and pepper. Simmer for another 2–3 minutes.
Ladle into bowls and garnish with crispy sage leaves and a swirl of cream.
Notes
Use fresh roasted pumpkin for deeper flavor if preferred.To make crispy sage leaves, quickly fry in oil for 5–10 seconds.Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.Reheat gently on the stovetop and add broth or cream if needed.
