Ground Beef Pita Pockets

Quick and flavorful ground beef pita pockets filled with seasoned meat, fresh veggies, and a creamy yogurt sauce. A perfect 30-minute weeknight dinner.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced (optional)
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp dried oregano
  • salt and black pepper to taste
  • 1 tbsp tomato paste or tomato sauce
  • 4 pita breads
  • shredded lettuce
  • diced tomatoes
  • cucumber, chopped
  • feta cheese or shredded cheese
  • Greek yogurt sauce or preferred sauce

Instructions

  • Heat a skillet over medium-high heat and add ground beef. Cook until browned, breaking it apart.
  • Add diced onion and cook until softened, then stir in garlic and cook for 30 seconds.
  • Stir in paprika, cumin, oregano, salt, and pepper.
  • Add tomato paste and a splash of water, mixing to coat the beef evenly.
  • Warm pita bread in a pan, oven, or microwave until soft.
  • Slice pita open and fill with beef mixture and desired toppings.
  • Add sauce and serve immediately.

Notes

Warm pita before filling to prevent tearing. Do not overcook beef to keep it juicy. Add toppings just before serving to avoid sogginess.
