Ingredients

  • 1 lb lean ground beef (90% lean)
  • 1/2 medium green cabbage, thinly sliced (about 4 cups)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp soy sauce (low sodium)
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp brown sugar (optional)
  • 1/4 tsp chili flakes (optional)
  • 2 tbsp chopped green onions (for garnish)
  • Salt and pepper to taste
  • 1 tbsp vegetable oil for cooking

Instructions

  • Heat oil in a large skillet or wok over medium-high heat.
  • Add ground beef and cook until browned, about 5–7 minutes. Break it up as it cooks.
  • Add chopped onion, garlic, and ginger. Sauté for 2 minutes until fragrant.
  • Stir in soy sauce, sesame oil, rice vinegar, and brown sugar (if using).
  • Add sliced cabbage and toss to coat with the sauce. Stir-fry for 5–7 minutes until cabbage softens but retains crunch.
  • Adjust seasoning with salt, pepper, and chili flakes as desired.
  • Remove from heat and garnish with chopped green onions.
  • Serve hot over rice, noodles, or on its own.

Notes

To make it keto-friendly, skip the brown sugar and serve on its own or over cauliflower rice. For extra flavor, add a drizzle of chili oil or a sprinkle of toasted sesame seeds. This stir-fry reheats beautifully—store leftovers in the fridge for up to 4 days.
