Ingredients

  • 2 boneless chicken breasts
  • 2 medium sweet potatoes, cubed
  • 1 cup quinoa or brown rice
  • 2 cups spinach or kale
  • 1 avocado, sliced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Marinate chicken with olive oil, paprika, garlic, salt, and pepper.
  • Grill chicken for 5–7 minutes per side until cooked through.
  • Peel and cube sweet potatoes, roast at 400°F for 25 minutes until caramelized.
  • Cook quinoa or rice according to package directions.
  • Assemble bowls: base of grains, top with chicken slices, roasted sweet potatoes, greens, and avocado.
  • Drizzle with dressing and garnish with parsley before serving.

Use chicken thighs for juicier flavor.
Swap quinoa with farro or couscous.
