1cupcherry tomatoes, halved
1/2cupred onion, diced
1/2cupolives, pitted and sliced

Instructions
Preparation
Pat the shrimp dry with paper towels to ensure they sear properly.
Toss shrimp with olive oil, garlic, oregano, paprika, lemon juice, salt, and pepper.
Heat a skillet over medium-high heat and cook the shrimp for about 2 minutes on each side, or until they turn pink and curl into a loose C shape.
Squeeze additional lemon juice over the shrimp just before serving.
Assembly
In each serving bowl, layer a base of cooked rice or quinoa.
Top with diced cucumber, cherry tomatoes, red onion, olives, and feta cheese.
Add the cooked shrimp on top and drizzle with yogurt sauce or tzatziki.
Notes
Feel free to customize with your favorite toppings and sauces. For a different base, try quinoa, farro, or cauliflower rice. To add spice, include crushed red pepper or fresh herbs.
