Ingredients

  • 1 lb boneless chicken breasts or thighs
  • 2 cups cooked rice (white or brown)
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, thinly sliced
  • 0.5 cup crumbled feta cheese
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 0.5 cup Greek yogurt
  • salt and pepper to taste

Instructions

  • Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper to create a marinade.
  • Add chicken and marinate for at least 30 minutes.
  • Grill or sear chicken for 6–7 minutes per side until golden and fully cooked.
  • Prepare cucumber salad by mixing cucumber, tomato, onion, and feta with olive oil and lemon.
  • Layer rice in a bowl, add sliced chicken, top with cucumber salad, and drizzle yogurt sauce.

Notes

Use brown rice or quinoa for extra fiber.
Add kalamata olives or fresh herbs for authentic flavor.
