Preparation
Heat a large skillet over medium to medium-high heat. Add the olive oil.
Add the cauliflower florets and a pinch of salt. Cook for about 8 to 10 minutes, stirring occasionally, until golden in spots and starting to soften, but not mushy.
Push the cauliflower to the sides of the skillet and drop in the mushrooms. Let them sit for 2 minutes without stirring to help them brown.
Stir the mushrooms and cook for another 4 to 6 minutes until they shrink and look browned.
Add the butter (if using), then the minced garlic, black pepper, Italian seasoning or thyme, and a pinch of red pepper flakes. Stir for 30 to 60 seconds until the garlic is fragrant.
Taste and adjust salt and pepper as needed. Finish with parsley or chives, a sprinkle of Parmesan, and a squeeze of lemon if desired.
Notes
Do not wash mushrooms under running water, as they can soak it up and get watery. Wipe them with a damp paper towel instead. Use a large skillet to avoid crowding, which can make mushrooms soggy.
