  • 3 cups cold cooked rice Jasmine or long grain works best.
  • 4-6 cloves garlic, chopped fine Use more if you love garlic.
  • 3 tablespoons butter
  • 1 tablespoon neutral oil Helps keep butter from burning.
  • 2-3 tablespoons soy sauce Optional but adds savory depth.
  • to taste Salt and black pepper Adjust according to preference.

Instructions

Preparation

  • Break up the rice using clean hands in a bowl to avoid clumpiness.
  • Heat your pan. Add oil and butter over medium heat until the butter melts and starts to bubble.

Cooking

  • Add the garlic to the pan and stir constantly for about 30 seconds to 1 minute until fragrant and turning pale gold.
  • Add the rice and toss it through the garlic butter. Spread it out and let it sit for 20 to 30 seconds, then stir again. Repeat this for a few times to achieve a toasted flavor.
  • Season the fried rice with soy sauce (if using), then taste and adjust with salt and pepper as needed. For heat, add chili crisp at the end.
  • Finish and serve the fried rice topped with green onions or a fried egg.

Notes

Keep cold rice in the fridge and do not rush the garlic to ensure that you achieve a toasty, buttery flavor.
