Fresh Mexican Couscous Salad
Fresh Mexican couscous salad made with cauliflower rice, black beans, vegetables, and lime dressing.

cauliflower rice

Instructions
Pulse cauliflower into fine couscous texture
Transfer to bowl
Add vegetables and black beans
Whisk dressing ingredients
Pour dressing over salad
Mix well
Serve with lime wedges
Notes
Adjust spice level with jalapeno
Store up to 3 days
Best served chilled
