Fresh Mexican Couscous Salad

Fresh Mexican couscous salad made with cauliflower rice, black beans, vegetables, and lime dressing.

Equipment

  • food processor
  • large bowl
  • Small bowl
  • whisk
  • measuring cups and spoons

Ingredients

  • 3 cups cauliflower rice
  • 1/2 cup red onion diced
  • 1 jalapeno diced
  • 1 bell pepper diced
  • 1 1/2 cups cherry tomatoes chopped
  • 3/4 cup cilantro
  • 1 cup black beans
  • 1/2 cup olive oil
  • 2 tbsp lime juice
  • 2 tsp cumin
  • 1 tbsp honey
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp chili powder

Instructions

  • Pulse cauliflower into fine couscous texture
  • Transfer to bowl
  • Add vegetables and black beans
  • Whisk dressing ingredients
  • Pour dressing over salad
  • Mix well
  • Serve with lime wedges

Notes

Adjust spice level with jalapeno
Store up to 3 days
