Ingredients

Pancake Base

  • 1 cup All purpose flour
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 2 tablespoons Sugar
  • 1 cup Milk (dairy or unsweetened alternative)
  • 1 large Egg
  • 2 tablespoons Melted butter (or neutral oil)
  • 4 ounces Cream cheese, softened
  • 1 teaspoon Vanilla extract

Toppings

  • 1 cup Strawberries, chopped, plus extra for topping

Instructions

Preparation

  • In a bowl, mix the dry ingredients: flour, baking powder, salt, and sugar.
  • In another bowl, mix the wet ingredients: milk, egg, melted butter, vanilla extract, and softened cream cheese until mostly smooth.
  • Gently combine the wet and dry ingredients until just mixed, then fold in the chopped strawberries.

Cooking

  • Butter a skillet and heat to medium heat. Pour about 1/4 cup of batter per pancake.
  • Cook until bubbles form on top and edges look dry, then flip and cook until done.
  • If making multiple pancakes, keep finished pancakes warm in a 200°F oven.

Notes

To make pancakes taste even more dessert-like, mix cream cheese with powdered sugar and a splash of milk for a drizzle. Enjoy these pancakes fresh or store leftovers in an airtight container for up to three days.
