Preparation
Chop the cauliflower into very small florets.
In a large bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper. Taste and adjust to be punchy.
Add cauliflower and toss well to coat. Then add cucumber, tomatoes, red onion, and parsley, tossing again.
Cover and let it chill in the fridge for at least 30 minutes; an hour or two is better for flavor.
Just before serving, fold in feta and olives, if using, and adjust salt and lemon to taste.
Notes
For lunches, consider keeping feta separate until the day of serving to maintain freshness.
