Ingredients

  • swordfish steaks (1 to 1.5 inch thick)
  • olive oil
  • fresh lemon juice
  • garlic, minced
  • salt
  • black pepper
  • dried oregano or parsley
  • optional red pepper flakes

Instructions

  • Preheat the grill to medium-high heat and clean the grates thoroughly. Lightly oil the grates to prevent sticking.
  • In a bowl, mix olive oil, lemon juice, minced garlic, salt, pepper, and oregano to create the marinade.
  • Coat the swordfish steaks with the marinade and refrigerate for 20 to 30 minutes.
  • Remove the fish from the fridge and pat dry lightly. Place the steaks on the grill and cook without moving for a few minutes until they release easily.
  • Flip the swordfish once and continue cooking until the center is opaque and the fish feels firm but slightly springy.
  • Remove from the grill, let rest for a couple of minutes, then squeeze fresh lemon juice over the top before serving.

Notes

Marinate swordfish for 20–30 minutes for best flavor and texture. Avoid over-marinating due to the lemon juice. Grill on clean, well-oiled grates to prevent sticking. Do not overcook, as swordfish can dry out quickly. Internal temperature should reach about 130–135°F for optimal juiciness.
