Preparation
Grate the zucchini, sprinkle with salt, and let it sit for 10 minutes to draw out moisture.
Squeeze the shredded zucchini in a clean kitchen towel to remove excess water.
In a bowl, combine the drained zucchini, eggs, flour, cheese, and green onions. Mix until well combined.
Cooking
Heat a skillet with a shallow layer of oil over medium heat.
Using a small scoop, drop fritter mixtures onto the skillet, flattening slightly.
Cook for about 3-4 minutes on each side until golden and crispy.
Transfer cooked fritters to a wire rack to keep crisp.
Making the Sauce
In a bowl, combine Greek yogurt, lemon juice, minced garlic, and salt. Mix until smooth.
Notes
