Ingredients

  • 1.5 lb baby yellow potatoes halved
  • 3-4 tablespoon olive oil
  • Salt or garlic salt and pepper
  • Fresh herbs rosemary thyme or parsley
  • 3/4 cup grated parmesan
  • 1/2 teaspoon garlic powder
  • 1/4-1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Optional chili flakes

Instructions

  • Preheat oven to 400F
  • Mix olive oil salt pepper and garlic powder
  • Spread oil on parchment-lined sheet pan
  • Sprinkle parmesan mixture evenly and do not move it
  • Place potatoes cut side down and press firmly
  • Drizzle top with oil and sprinkle salt
  • Bake 35-40 minutes until golden and crispy
  • Garnish with fresh herbs after baking

Notes

Use fresh grated parmesan for best crispiness
Do not open oven frequently
Add herbs after baking to keep flavor fresh
Microwave potatoes briefly to reduce cooking time
