Ingredients

  • 2 cups shredded cooked chicken (rotisserie recommended)
  • 8–10 corn tortillas
  • 0.5 cup shredded cheese (cheddar or Mexican blend)
  • 3 tbsp cream cheese
  • 1 tsp taco seasoning
  • 1 can diced green chiles (small can)
  • as needed olive oil spray or brush for baking

Instructions

  • Preheat oven to 425°F or air fryer to 400°F.
  • Warm tortillas in the microwave for 20–30 seconds wrapped in a damp towel to soften.
  • In a bowl, combine shredded chicken, cream cheese, shredded cheese, taco seasoning, and green chiles.
  • Spoon 2–3 tablespoons of filling near one edge of each tortilla and roll tightly.
  • Place rolled taquitos seam-side down on a lined baking tray or air fryer basket.
  • Lightly brush or spray with olive oil for crispiness.
  • Bake for 20–22 minutes or air fry for 8–10 minutes, flipping halfway through.
  • Serve hot with your favorite dips like sour cream, guacamole, or salsa.

Notes

Warm tortillas before rolling to prevent cracking.
Store leftovers in an airtight container for up to 3 days.
Freeze before or after baking and reheat in oven or air fryer.
