Crispy Cheese Quesadillas

These crispy, golden cheese quesadillas are the ultimate quick and customizable comfort food. Stuffed with gooey cheese and optional fillings like chicken, beans, or veggies, they’re perfect for any meal, ready in minutes and sure to please everyone at the table.

Ingredients

  • 4 flour tortillas (8-inch)
  • 1 ½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 cup cooked chicken, beef, beans, or veggies (optional)
  • 1 tbsp butter or oil for cooking
  • Optional toppings: salsa, guacamole, sour cream, jalapeños

Instructions

  • Place a large skillet over medium heat and lightly grease with butter or oil.
  • Place one tortilla in skillet, sprinkle evenly with half the cheese and desired fillings, then top with another tortilla.
  • Let the bottom tortilla turn golden and crispy, about 2–3 minutes.
  • Carefully flip and cook the other side until golden and cheese is fully melted.
  • Remove from skillet, cut into wedges, and serve hot with your favorite dips.

Notes

Best served fresh for crispiness. Reheat in a skillet or air fryer, not a microwave, to retain texture. Mix cheese types for more flavor. Corn tortillas can be used, but stack two for strength. To bake instead of pan-fry, use a 425°F oven for 8–10 minutes, flipping halfway.
