Instructions
Cooking
Heat olive oil or butter in a large skillet over medium heat.
Add sliced mushrooms and let them brown for about 1 minute without stirring.
Stir in minced garlic and cook for another 30 seconds until fragrant.
Add the gnocchi to the pan and pour in the vegetable broth. Bring to a gentle simmer and cover.
Cook for about 5 minutes until the gnocchi is tender.
Pour in the cream and allow to bubble for another minute or two to thicken.
Stir in the spinach, allowing it to wilt, then add parmesan, salt, pepper, and lemon juice.
Serve immediately, garnished with extra parmesan if desired.
Notes
For best results, brown the mushrooms properly and avoid adding too much liquid. Use fresh parmesan for a richer flavor.
