  • 8 ounces sliced mushrooms Cremini or white button mushrooms.
  • 2 cloves minced garlic For flavor.
  • 16 ounces shelf-stable potato gnocchi Or refrigerated/frozen gnocchi.
  • 2 cups vegetable broth Used for cooking the gnocchi.
  • 1 cup heavy cream For the creamy sauce.
  • 4 ounces fresh spinach Will wilt down in the sauce.
  • 1/2 cup grated parmesan cheese For finishing the dish.
  • to taste salt and pepper To season the dish.
  • 1 tablespoon lemon juice Optional for brightness.

Instructions

Cooking

  • Heat olive oil or butter in a large skillet over medium heat.
  • Add sliced mushrooms and let them brown for about 1 minute without stirring.
  • Stir in minced garlic and cook for another 30 seconds until fragrant.
  • Add the gnocchi to the pan and pour in the vegetable broth. Bring to a gentle simmer and cover.
  • Cook for about 5 minutes until the gnocchi is tender.
  • Pour in the cream and allow to bubble for another minute or two to thicken.
  • Stir in the spinach, allowing it to wilt, then add parmesan, salt, pepper, and lemon juice.
  • Serve immediately, garnished with extra parmesan if desired.

Notes

For best results, brown the mushrooms properly and avoid adding too much liquid. Use fresh parmesan for a richer flavor.
