Creamy Shrimp Pasta (30-Minute Garlic Parmesan)

Ingredients

  • 12 oz. fettuccine
  • 2 Tbsp. olive oil
  • 12 Tbsp. salted butter
  • 1 lb. jumbo shrimp, peeled and deveined
  • Kosher salt, to taste
  • Black pepper, to taste
  • 1 1/2 cups heavy cream
  • 2 cloves garlic, minced
  • 2 cups freshly grated parmesan (about 8 oz.)
  • 1/2 cup fresh parsley, chopped, plus more for garnish

Instructions

  • Cook pasta according to package instructions; do not rinse.
  • Heat olive oil and 2 Tbsp. butter in skillet over medium-high heat.
  • Sauté shrimp with salt and pepper until pink, 2–2.5 minutes. Set aside.
  • Add cream and remaining butter to skillet; reduce heat to medium.
  • Stir in garlic and 1½ cups parmesan until smooth and thickened.
  • Return shrimp and pasta to pan; toss to coat in sauce.
  • Add parsley, adjust seasoning, and combine everything gently.
  • Top with remaining ½ cup parmesan and extra parsley.
  • Serve hot, straight from skillet or on plates.

Notes

Always use freshly grated parmesan for a smooth sauce.
Avoid overcooking shrimp—they cook quickly.
For a twist, add lemon zest or red pepper flakes.
