Ingredients

fettuccine

Tbsp.
olive oil

Tbsp.
salted butter

lb.
jumbo shrimp, peeled and deveined
Kosher salt, to taste
Black pepper, to taste
1 1/2
cups
heavy cream
2
cloves
garlic, minced
2
cups
freshly grated parmesan (about 8 oz.)
1/2
cup
fresh parsley, chopped, plus more for garnish
Instructions
Cook pasta according to package instructions; do not rinse.
Heat olive oil and 2 Tbsp. butter in skillet over medium-high heat.
Sauté shrimp with salt and pepper until pink, 2–2.5 minutes. Set aside.
Add cream and remaining butter to skillet; reduce heat to medium.
Stir in garlic and 1½ cups parmesan until smooth and thickened.
Return shrimp and pasta to pan; toss to coat in sauce.
Add parsley, adjust seasoning, and combine everything gently.
Top with remaining ½ cup parmesan and extra parsley.
Serve hot, straight from skillet or on plates.
Notes
Always use freshly grated parmesan for a smooth sauce.
Avoid overcooking shrimp—they cook quickly.
For a twist, add lemon zest or red pepper flakes.
