Creamy Shrimp and Mashed Potatoes

Creamy shrimp and mashed potatoes with garlic shrimp, crisp salad, and cool tzatziki. Comforting, balanced, and easy.

Ingredients

  • 4 potatoes, peeled
  • 1/3 cup milk
  • 2 tablespoons butter
  • 1 lb shrimp, peeled and deveined
  • 6 cloves garlic, minced
  • 2 teaspoons chili powder
  • 4 tablespoons olive oil
  • Greek yogurt, dill, cucumber, lettuce, radishes, lemon juice (for salad and tzatziki)

Instructions

  • Boil potatoes in salted water until fork-tender.
  • Prepare tzatziki and salad while potatoes cook.
  • Cook shrimp with olive oil, garlic, and chili powder.
  • Mash potatoes with milk and butter.
  • Assemble bowls and serve immediately.
