Creamy Pea Salad with Eggs and Cheddar

Ingredients

  • 1 16 oz package frozen sweet peas, thawed
  • 2 hard-boiled eggs, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp celery seeds or 1/2 cup chopped celery
  • A pinch of cayenne pepper (optional)

Instructions

  • In a large bowl, add thawed peas, chopped eggs, green onions, and cheese.
  • In a small bowl, whisk together mayonnaise, sour cream, salt, pepper, garlic powder, celery seed, and cayenne.
  • Pour dressing over the pea mixture and gently stir to combine.
  • Cover and refrigerate for at least 1 hour.
  • Stir before serving. Enjoy chilled.

Notes

Use Greek yogurt instead of sour cream for a lighter version.
Add diced red bell pepper for color and crunch.
Make up to 24 hours ahead for deeper flavor.
