Creamy Gnocchi with Spinach

Equipment

  • Large skillet with lid for cooking everything in one pan
  • wooden spoon or spatula
  • knife to mince garlic
  • cutting board

Ingredients

  • 1 tbsp olive oil
  • 8 oz spinach
  • 16 oz potato gnocchi
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • black pepper and red pepper flakes to taste
  • feta cheese, crumbled

Instructions

  • Heat olive oil in skillet; cook spinach until wilted. Remove and set aside.
  • In the same skillet, add gnocchi, broth, cream, garlic, and seasonings. Stir well.
  • Cover and simmer for 5 minutes.
  • Add spinach back to the pan. Stir gently.
  • Cook another 2–3 minutes until thickened.
  • Add feta and remove from heat.
  • Serve warm with bread or salad.

Notes

You can use half-and-half instead of cream for a lighter version.
Add roasted red peppers or sun-dried tomatoes for a flavor twist.
