Instructions
Preparation
Heat olive oil in a skillet over medium heat.
Season chicken breasts with salt and pepper.
Cooking
Cook the chicken until browned and cooked through, about 6-7 minutes per side, depending on thickness.
Remove chicken from the skillet and set aside.
In the same skillet, add sliced mushrooms and minced garlic, sautéing until the mushrooms are tender, about 4-5 minutes.
Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the skillet.
Stir in heavy cream and Parmesan cheese, cooking until the sauce thickens, about 3-4 minutes.
Assembly
Return the chicken to the skillet, coating it with the sauce.
Garnish with parsley and serve warm.

Consider using fresh, high-quality ingredients to really enhance the flavors of this dish. Freshly grated Parmesan cheese adds a wonderful creaminess.
