Instructions

Preparation

  • Heat olive oil in a skillet over medium heat.
  • Season chicken breasts with salt and pepper.

Cooking

  • Cook the chicken until browned and cooked through, about 6-7 minutes per side, depending on thickness.
  • Remove chicken from the skillet and set aside.
  • In the same skillet, add sliced mushrooms and minced garlic, sautéing until the mushrooms are tender, about 4-5 minutes.
  • Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the skillet.
  • Stir in heavy cream and Parmesan cheese, cooking until the sauce thickens, about 3-4 minutes.

Assembly

  • Return the chicken to the skillet, coating it with the sauce.
  • Garnish with parsley and serve warm.
