Ingredients

  • 2 boneless chicken breasts
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 red bell pepper, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 8 oz fettuccine or penne pasta
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  • Season chicken breasts with Cajun seasoning on both sides.
  • Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden brown and cooked through, about 5–6 minutes per side. Remove from skillet and slice.
  • In the same skillet, sauté garlic, onion, and bell pepper until soft and fragrant, about 4 minutes.
  • Add heavy cream and chicken broth. Stir well and bring to a simmer. Let it reduce slightly, about 3–4 minutes.
  • Stir in Parmesan cheese and let it melt into the sauce until smooth and creamy.
  • Meanwhile, cook pasta in salted water until al dente. Drain and add pasta to the skillet with sauce. Toss to coat well.
  • Add sliced chicken back into the skillet. Stir to combine and heat through.
  • Garnish with chopped parsley and serve immediately.

Notes

Adjust Cajun seasoning for preferred heat level. Swap chicken with shrimp for a seafood twist. For a lighter option, use Greek yogurt or half-and-half instead of heavy cream. Add veggies like spinach or mushrooms for extra nutrition. Reheats well—great for meal prep.
