Ingredients

  • 1 cup rolled oats
  • 2 cups milk (dairy or non-dairy)
  • 1 egg
  • 2 tbsp brown sugar or maple syrup
  • 0.5 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 1 pinch salt
  • Optional: banana, berries, apples, nuts, Greek yogurt for topping

Instructions

  • Preheat oven to 350°F (175°C) if baking. In a bowl, whisk together milk, egg, sweetener, vanilla, cinnamon, and salt until well combined.
  • Add rolled oats to the mixture and stir until fully coated.
  • Pour mixture into a greased baking dish and bake for 20–25 minutes until set and golden on top.
  • For stovetop version, simmer mixture over low heat, stirring regularly, for 8–10 minutes until thick and creamy.
  • Spoon into bowls and top with fruit, nuts, yogurt, or a drizzle of syrup. Serve warm or chill for later.

Notes

This dish is very forgiving and adaptable. Add mashed banana, sautéed apples, or berries for seasonal flavor. Best enjoyed warm with a splash of milk or a dollop of yogurt. Stores well for 4 days or freeze in silicone muffin trays for individual portions.
