Cowboy Butter Shrimp Skewers

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 0.5 tsp paprika
  • 0.25 tsp chili flakes
  • 2 tbsp parsley, chopped
  • Salt & pepper to taste

Instructions

  • Thread shrimp onto skewers and season with salt and pepper.
  • In a small bowl, whisk together melted butter, garlic, Dijon mustard, lemon juice, paprika, chili flakes, and chopped parsley.
  • Grill or pan-sear the shrimp skewers over medium-high heat, basting with the cowboy butter as they cook.
  • Cook 2–3 minutes per side until shrimp are opaque and slightly charred.
  • Serve hot with lemon wedges or extra cowboy butter on the side.

Notes

Use metal or soaked wooden skewers to prevent burning. To make spicier, add more chili flakes or a splash of hot sauce. Serve over rice, couscous, or pasta for a full meal. Best enjoyed fresh, but leftovers can be stored for up to 2 days.
