Instructions
Cooking the Meat
Cook your meat in a skillet over medium heat, breaking it up as it browns.
Sprinkle in taco seasoning and a splash of water. Stir until coated and the meat looks juicy. Adjust salt to taste.
Assembling the Bowl
In a bowl, add a generous scoop of cottage cheese (around 3/4 cup to 1 cup).
Top the cottage cheese with warm taco meat, allowing the heat to soften the cheese.
Add salsa, lettuce, tomatoes, and any desired toppings. Finish with a squeeze of lime.
Notes
For meal prep, store the meat and toppings separately and assemble when ready to eat. For a smoother base, blend the cottage cheese if desired.
