Ingredients
1/2cupcottage cheese
2eggs
1/2cupsugar
1/4cupmelted butter
1tspvanilla extract
Zest and juice of 1 lemon

Instructions
Preheat oven to 350°F (175°C). Line or grease a muffin tin.
In a bowl, whisk cottage cheese, eggs, sugar, melted butter, vanilla, lemon zest, and juice until smooth.
In another bowl, whisk together flour, baking powder, and poppy seeds.
Add dry ingredients to wet and gently mix until just combined.
Spoon batter evenly into muffin tin.
Bake for 20–25 minutes until tops are golden and a toothpick comes out clean.
Cool in pan 5 minutes, then transfer to wire rack to cool completely.
