Ingredients

  • 1/2 cup cottage cheese
  • 2 eggs
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • Zest and juice of 1 lemon
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tbsp poppy seeds

Instructions

  • Preheat oven to 350°F (175°C). Line or grease a muffin tin.
  • In a bowl, whisk cottage cheese, eggs, sugar, melted butter, vanilla, lemon zest, and juice until smooth.
  • In another bowl, whisk together flour, baking powder, and poppy seeds.
  • Add dry ingredients to wet and gently mix until just combined.
  • Spoon batter evenly into muffin tin.
  • Bake for 20–25 minutes until tops are golden and a toothpick comes out clean.
  • Cool in pan 5 minutes, then transfer to wire rack to cool completely.

Notes

Glaze with lemon icing for extra sweetness.
Use whole wheat flour for added fiber.
Substitute Greek yogurt for cottage cheese if needed.
