Ingredients

  • 1 cup cottage cheese
  • 2 ripe bananas
  • 1 cup rolled oats
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1 pinch salt
  • cooking spray or butter (for skillet)

Instructions

  • Blend cottage cheese, bananas, oats, eggs, baking powder, vanilla, cinnamon, and salt until smooth.
  • Preheat a nonstick skillet and lightly coat with cooking spray or butter.
  • Pour small rounds of batter and cook until bubbles form, about 2–3 minutes.
  • Flip and cook the other side until golden brown.
  • Repeat until all batter is used.
  • Serve warm with toppings like fruit, yogurt, or nut butter.

Notes
