3ripe bananas, mashed
1/2cupcottage cheese
2large eggs
1/2cupsugar (or honey/maple syrup)
1/4cupmelted butter or coconut oil
1tspvanilla extract
1 1/2cupsall-purpose flour (or whole wheat)
1tspbaking soda
1/2tspcinnamon
1/4tspsalt
1/2cupchopped walnuts, pecans, or chocolate chips (optional)
Instructions
Preheat oven to 350°F (175°C). Grease or line a 9x5-inch loaf pan.
In a large bowl, mash bananas. Stir in cottage cheese, eggs, sugar, butter, and vanilla.
In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
Gently fold dry ingredients into wet until just combined.
Add nuts or chocolate chips if using, and mix gently.
Pour batter into prepared loaf pan and smooth the top.
