Cottage Cheese Bagels

These cottage cheese bagels are soft, protein-rich, and made with just a few ingredients, perfect for quick mornings or weekend brunch.

Equipment

Ingredients

  • 1 cup self-rising flour (or 1 cup AP flour + 1 tsp baking powder + 1/2 tsp salt)
  • 1 cup full-fat cottage cheese
  • 1 large egg, beaten (for egg wash)
  • Toppings: sesame seeds, everything bagel seasoning, shredded asiago cheese, poppy seeds

Instructions

  • Preheat oven to 375°F and line a baking sheet with parchment paper.
  • Blend cottage cheese until smooth using a food processor.
  • Transfer to a bowl, add flour, and mix until a dough forms.
  • Turn dough onto floured surface and knead 8–10 times until smooth.
  • Divide into 4 balls, roll into ropes, and form bagel shapes.
  • Brush with egg wash and add toppings of choice.
  • Bake for 25–30 minutes until golden. Cool 15 minutes before slicing.
  • (Alternative air fry: cook at 350°F for 12–14 minutes)

Notes

Use a thick, full-fat cottage cheese for best results. Store in an airtight container for up to 4 days or freeze for 2 months. To reheat: toast or warm in oven at 300°F for 5–6 minutes.
