4tablespoonsbutter or margarine
4tablespoonsall-purpose flour
2cupshalf and half (or heavy cream)
1/2cupfreshly grated Parmesan cheese (or more)
salt and white pepper to taste
1pinchcayenne pepper (optional)
8ouncescooked snow crab meat, chunked
Instructions
In a large saucepan, melt butter over medium heat. Stir in flour to make a roux, cooking just until it begins to bubble.
Whisk in the half and half, stirring until smooth and slightly thickened.
Add Parmesan cheese, salt, pepper, and optional cayenne. Stir to combine.
Simmer the sauce gently for 4–5 minutes—do not let it boil.
Fold in the cooked crab meat and heat through over low heat.
Serve over fettuccine or pasta of choice. Garnish with extra Parmesan and chopped parsley.
Notes
Use freshly grated Parmesan for the smoothest sauce.
Add a squeeze of lemon juice or zest for a brighter flavor.
Do not overcook crab or it will turn rubbery.
