Ingredients

  • 4 tablespoons butter or margarine
  • 4 tablespoons all-purpose flour
  • 2 cups half and half (or heavy cream)
  • 1/2 cup freshly grated Parmesan cheese (or more)
  • salt and white pepper to taste
  • 1 pinch cayenne pepper (optional)
  • 8 ounces cooked snow crab meat, chunked

Instructions

  • In a large saucepan, melt butter over medium heat. Stir in flour to make a roux, cooking just until it begins to bubble.
  • Whisk in the half and half, stirring until smooth and slightly thickened.
  • Add Parmesan cheese, salt, pepper, and optional cayenne. Stir to combine.
  • Simmer the sauce gently for 4–5 minutes—do not let it boil.
  • Fold in the cooked crab meat and heat through over low heat.
  • Serve over fettuccine or pasta of choice. Garnish with extra Parmesan and chopped parsley.

Notes

Use freshly grated Parmesan for the smoothest sauce.
Add a squeeze of lemon juice or zest for a brighter flavor.
Do not overcook crab or it will turn rubbery.
