3-4clementines, peeled and segmented
2cucumbers, sliced into half moons

Instructions
Peel clementines and separate into segments.
Slice cucumbers into half moons and pat dry with a paper towel.
In a small bowl, whisk together olive oil, vinegar, clementine juice, honey, salt, pepper, and chili flakes if using.
Combine cucumbers and clementines in a bowl or arrange on a platter.
Drizzle dressing over the salad just before serving.
Top with chopped herbs and serve immediately.
