Ingredients

  • 3-4 clementines, peeled and segmented
  • 2 cucumbers, sliced into half moons
  • 2 tbsp olive oil
  • 1 tbsp rice vinegar or white wine vinegar
  • 1 tbsp fresh clementine juice
  • 1 tsp honey (optional)
  • salt and black pepper
  • chopped parsley or mint
  • pinch of chili flakes (optional)

Instructions

  • Peel clementines and separate into segments.
  • Slice cucumbers into half moons and pat dry with a paper towel.
  • In a small bowl, whisk together olive oil, vinegar, clementine juice, honey, salt, pepper, and chili flakes if using.
  • Combine cucumbers and clementines in a bowl or arrange on a platter.
  • Drizzle dressing over the salad just before serving.
  • Top with chopped herbs and serve immediately.

Notes

Pat cucumbers dry to avoid excess moisture. Keep dressing separate until serving to maintain crispness. Add herbs at the last minute for best flavor. Adjust honey and vinegar to taste.
