Equipment

  • large saucepan
  • wooden spoon
  • measuring cups and spoons
  • stove

Ingredients

  • 4 1/2 cups whole milk
  • 1/4 cup granulated sugar
  • pinch of salt
  • 3/4 cup short-grain white rice, uncooked
  • 1/3 cup raisins (optional)
  • 1 tsp vanilla extract
  • ground cinnamon, to taste

Instructions

  • In a large saucepan, stir together the milk, sugar, and salt and bring to a boil over medium-high heat.
  • Stir in the rice, reduce heat to low, and partially cover. Simmer, stirring frequently, for 25–30 minutes until the rice is tender and the mixture thickens.
  • Add the raisins (if using), vanilla extract, and cinnamon. Cook for a few more minutes until well combined.
  • Remove from heat and let cool slightly. Serve warm, or refrigerate and enjoy chilled.
  • Stir in additional milk before serving if needed to adjust the consistency.

Notes

If the pudding becomes too thick, stir in a splash of milk before serving. If it’s too thin, simmer a little longer to reach your desired consistency. Store in an airtight container for up to 5 days and reheat gently with extra milk. Delicious served warm or chilled.
