Ingredients

  • 2 large oranges, peeled and segmented
  • 1 cup baby spinach or arugula
  • 1/2 cup crumbled feta cheese
  • 1/4 cup pistachios, roughly chopped
  • 2 tbsp fresh mint, thinly sliced
  • 1 tbsp extra-virgin olive oil
  • 1 tsp honey
  • 1/2 tsp Dijon mustard
  • 1 tsp lemon juice
  • salt and black pepper to taste

Instructions

  • In a small bowl, whisk together olive oil, honey, Dijon mustard, lemon juice, salt, and pepper to prepare the dressing.
  • Peel and segment the oranges, removing any seeds and white pith.
  • Arrange spinach or arugula on a serving plate.
  • Top with orange segments, crumbled feta cheese, and chopped pistachios.
  • Drizzle the honey-citrus dressing over the salad.
  • Garnish with fresh mint and serve immediately.
