Preparation
Rinse the quinoa in a fine strainer for 20 to 30 seconds.
Add quinoa, milk, a splash of water, salt, and cinnamon to a pot.
Cooking
Bring to a gentle simmer, then lower the heat.
Stir in the chopped apples. Cover and cook until quinoa is tender and apples are soft, about 15 to 20 minutes.
Turn off heat, add a splash of vanilla if desired, then taste and sweeten with maple syrup or honey.
Notes
Chop apples small for a better texture. Save some apples to stir in for added crunch if desired. Store in the fridge for up to 4 days and reheat with a little milk.
