Cinnamon Apple Quinoa Breakfast

Ingredients

Main Ingredients

  • 1 cup Quinoa (rinsed)
  • 2 cups Milk of choice (dairy or non-dairy) plus a splash of water Oat milk makes it cozy; dairy milk makes it richer.
  • 1-2 pieces Apples (chopped small, e.g., Honeycrisp or Gala)
  • 1 tbsp Ground cinnamon Be generous with cinnamon.
  • 1 pinch Salt
  • to taste Maple syrup or honey (optional) Sweeten to taste.
  • 1 tsp Vanilla extract (optional) Enhances aroma.

Toppings (optional)

  • 1/4 cup Chopped nuts
  • 1/4 cup Raisins
  • 1/4 cup Chia seeds
  • 1/2 cup Yogurt For added creaminess.

Instructions

Preparation

  • Rinse the quinoa in a fine strainer for 20 to 30 seconds.
  • Add quinoa, milk, a splash of water, salt, and cinnamon to a pot.

Cooking

  • Bring to a gentle simmer, then lower the heat.
  • Stir in the chopped apples. Cover and cook until quinoa is tender and apples are soft, about 15 to 20 minutes.
  • Turn off heat, add a splash of vanilla if desired, then taste and sweeten with maple syrup or honey.

Notes

Chop apples small for a better texture. Save some apples to stir in for added crunch if desired. Store in the fridge for up to 4 days and reheat with a little milk.
