Chocolate Walnut Banana Bread

Ingredients

Main Ingredients

  • 3 medium ripe bananas Heavily speckled or brown for best flavor.
  • 1/2 cup melted butter or neutral oil Melted butter gives the best flavor.
  • 1/2 cup brown sugar Adds moisture and depth of flavor.
  • 1/2 cup white sugar
  • 2 large eggs Can be substituted with a flax egg.
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour Can substitute half with whole wheat.
  • 3/4 cup unsweetened cocoa powder Dutch process works too.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips Dark chocolate chips can also be used.
  • 1/2 cup chopped walnuts Lightly toasted for more flavor.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9 by 5 inch loaf pan, or line it with parchment paper.
  • In a large bowl, mash the ripe bananas with a fork, leaving a few small lumps for texture.
  • Whisk in melted butter or oil, brown sugar, white sugar, eggs, and vanilla until well combined.
  • Sprinkle in the flour, cocoa powder, baking soda, and salt. Stir gently until the flour just disappears.
  • Fold in chocolate chips and chopped walnuts, saving a small handful for topping if desired.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake for 55 to 65 minutes, checking around 50 minutes for doneness. A toothpick should come out with a few moist crumbs, not wet batter.
  • Let it cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure not to overmix after adding dry ingredients. Store the cooled loaf wrapped tightly for up to 3 days at room temperature, a week in the fridge, or slice and freeze for up to 3 months.
