Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/8 tsp cayenne pepper
  • Cooked white rice
  • Shredded cabbage
  • Limes
  • Tortilla chips
  • 2 mangos diced
  • 1 avocado diced
  • 1/4 cup red onion
  • 1 jalapeño
  • 2 tbsp cilantro
  • 1 lime juiced

Instructions

  • Mix salsa ingredients and chill
  • Combine spice mix
  • Pat shrimp dry and coat with oil and spices
  • Cook shrimp 2-3 minutes per side
  • Assemble bowls with rice, shrimp, cabbage, and salsa

Notes

Do not overcook shrimp
Add lime juice before serving
Store components separately for meal prep
