Chewy Ube Mochi Bars

These Chewy Ube Mochi Bars are a delightful treat that combine a crackly top, a chewy middle, and the beautiful purple hue of ube. Perfect for potlucks or a special dessert at home.

Ingredients

For the bars

  • 2 cups Glutinous rice flour Spoon into measuring cup and level off.
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 2 large Eggs Room temperature for best results.
  • 3/4 cup Granulated sugar
  • 1 cup Milk Whole milk preferred but any type can be used.
  • 1/3 cup Melted butter Or neutral oil if needed.
  • 1 cup Ube halaya or cooked ube If super thick, mash to blend.
  • 1 teaspoon Ube extract Optional, for extra flavor.
  • 1 teaspoon Vanilla extract Rounds out the flavor.

Instructions

Preparation

  • Preheat your oven to 350°F and grease a 9x13 inch pan, optionally lining with parchment.
  • In a bowl, whisk together glutinous rice flour, baking powder, and salt.
  • In another bowl, whisk eggs and sugar until smooth, then whisk in the milk and melted butter.
  • Stir in the ube halaya, adding ube extract if using.
  • Mix the wet ingredients into the dry ingredients until the batter is smooth.
  • Pour the batter into the prepared pan and bake until set, glossy on top, and a toothpick comes out with a few sticky crumbs.
  • Let cool for at least 45 minutes before slicing.

Notes

For best results, do not overbake to keep the chewy texture. Cool fully before slicing. Can be stored in an airtight container at room temperature for about 2 days or in the fridge for up to 5 days. Reheat in the microwave for 10 to 15 seconds if desired.
