Ingredients
1cupunsalted butter, softened
1/2cuppowdered sugar (for dough)
1tspvanilla extract
2 1/4cupsall-purpose flour
1/4tspsalt
1cupdried cherries, finely chopped
1cuppowdered sugar (for rolling)
Instructions
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream the butter and powdered sugar until light and fluffy.
Mix in the vanilla extract until smooth.
Gradually add the flour and salt, mixing just until combined.
Fold in the finely chopped dried cherries.
Shape the dough into 1-inch balls and place them 2 inches apart on the baking sheets.
Bake for 12–15 minutes, until the bottoms are lightly golden.
Cool for 5 minutes, then roll the warm cookies in powdered sugar.
Let cookies cool completely on a wire rack, then roll again in powdered sugar.

Use truly softened butter for a smooth dough. Roll cookies in powdered sugar while still warm and again once cooled for the best snowy coating. Finely chopping the cherries ensures even distribution and tender cookies.
