Equipment

  • hand mixer or spoon
  • baking sheets
  • parchment paper
  • wire rack

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar (for dough)
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1 cup dried cherries, finely chopped
  • 1 cup powdered sugar (for rolling)

Instructions

  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, cream the butter and powdered sugar until light and fluffy.
  • Mix in the vanilla extract until smooth.
  • Gradually add the flour and salt, mixing just until combined.
  • Fold in the finely chopped dried cherries.
  • Shape the dough into 1-inch balls and place them 2 inches apart on the baking sheets.
  • Bake for 12–15 minutes, until the bottoms are lightly golden.
  • Cool for 5 minutes, then roll the warm cookies in powdered sugar.
  • Let cookies cool completely on a wire rack, then roll again in powdered sugar.

Notes

Use truly softened butter for a smooth dough. Roll cookies in powdered sugar while still warm and again once cooled for the best snowy coating. Finely chopping the cherries ensures even distribution and tender cookies.
