Ingredients
For the base

Instructions
Preparation
Preheat your oven to 425 F and line a big sheet pan with parchment paper for easy cleanup.
Slice the zucchini thick, avoiding paper-thin slices that turn soft quickly.
Lay the zucchini on the pan in a single layer. Brush or toss with a bit of oil and sprinkle with salt, pepper, and garlic powder.
Bake the zucchini for 8 to 10 minutes to give it a head start in drying out.
Assembly
While the zucchini is baking, toss the cooked chicken with BBQ sauce in a bowl.
Remove the zucchini from the oven and blot any excess moisture with a paper towel.
Scatter the BBQ chicken over the zucchini and add onions, beans, corn, or jalapenos if desired.
Sprinkle cheese all over the top and return to the oven for an additional 6 to 10 minutes or until the cheese is melted and bubbling.
Finish by adding cilantro, a squeeze of lime, and your choice of creamy topping like sour cream or ranch.
Notes
Zucchini nachos are best served hot and fresh. You can prep ingredients ahead of time but ideally bake and serve right before serving.
