Ingredients

  • 1 can chicken breast (12.5 oz), drained and flaked
  • 1/4 cup Greek yogurt
  • 1 tsp Dijon mustard
  • 1/2 tsp lemon juice
  • 1 celery stalk, chopped
  • 1 tbsp red onion, chopped
  • to taste salt and pepper
  • as desired cranberries, chopped nuts, herbs (optional)

Instructions

  • In a bowl, mix yogurt, mustard, and lemon juice.
  • Add flaked canned chicken and mix gently.
  • Fold in celery, onion, and optional mix-ins.
  • Season with salt and pepper to taste.
  • Serve immediately or chill for 30 minutes.

Notes

You can store leftovers in the fridge for up to 4 days. Adjust lemon or mustard to taste. Serve in lettuce cups, sandwiches, or with crackers.
