Ingredients
4salmon fillets (about 6 oz each)
1/2lblarge shrimp, peeled and deveined
2tbspCajun seasoning
2tbspolive oil
2tbspbutter
3clovesgarlic, minced
1/2cupred onion, minced
1tbspflour (optional)
2cupsfresh spinach, roughly chopped
1cupheavy cream
1cupchicken broth
1/2cupgrated Parmesan cheese
1/2cupshredded mozzarella cheese
1tspadditional Cajun seasoning (optional)

Instructions
Pat the salmon fillets and shrimp dry with paper towels and season evenly with Cajun seasoning.
Heat the olive oil and butter in a large skillet over medium-high heat. Sear the salmon for 4–5 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, cook the shrimp for 2–3 minutes per side until pink and opaque. Remove and set aside.
Add the garlic and red onion to the skillet and sauté until fragrant, about 1 minute. Sprinkle in the flour if using.
Stir in the spinach and cook until wilted, then pour in the heavy cream and chicken broth. Bring to a gentle simmer.
Add the Parmesan and mozzarella cheeses and stir until melted and smooth. Season with salt, pepper, and extra Cajun seasoning if desired.
Return the salmon and shrimp to the skillet, spoon the sauce over the top, and simmer for 1–2 minutes to meld the flavors.
Notes
Store leftovers in an airtight container for up to 2 days. Reheat gently with a splash of milk or broth to loosen the sauce. Finish with fresh herbs or lemon juice to brighten the flavors before serving.
