Servings 4

Equipment

  • large wok or skillet
  • mixing bowl
  • strainer
  • cooking spoon or tongs
  • measuring spoons

Ingredients

  • 1/2 medium head green cabbage (approx. 450g / 1 lb), thinly sliced
  • 200 g glass noodles (dried), soaked and drained
  • 3 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • 1–2 dried chili peppers (to taste)
  • 3–4 cloves garlic, finely minced
  • 1–2 tbsp cooking oil (vegetable, canola, or olive)
  • optional sesame oil for finishing

Instructions

  • Soak the glass noodles in a bowl of hot water for 5–10 minutes, until soft and pliable. Drain well and set aside.
  • Whisk together light soy sauce, dark soy sauce, and sugar until dissolved. Set aside.
  • Heat oil in a large wok or skillet over medium-high heat.
  • Add dried chili pepper and minced garlic. Stir-fry 30 seconds to 1 minute until fragrant.
  • Add the cabbage and stir-fry for 5–7 minutes until softened but still crisp-tender.
  • Add the drained glass noodles and pour in the sauce.
  • Stir-fry another 3–5 minutes until everything is glossy and evenly coated.
  • Serve immediately, with a drizzle of sesame oil if desired.

Notes

• Do not over-soak glass noodles — this keeps them chewy.
• Avoid overcrowding the wok; cook in batches if needed.
• Adjust chili to your spice level.
• A touch of sesame oil adds nutty aroma and depth at the end.
