Ingredients

  • 1 tbsp olive oil or butter
  • 1 lb boneless, skinless chicken breast, diced
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • ½ cup milk (any kind)
  • 2 cups broccoli florets (fresh or frozen)
  • 1 ½ cups sharp cheddar cheese, freshly grated
  • ¼ cup Monterey Jack or mozzarella (optional, for melt)
  • red pepper flakes (optional for garnish)

Instructions

  • Heat olive oil or butter in a large skillet over medium heat. Add diced chicken, salt, and pepper. Cook until browned and cooked through (about 5–6 minutes). Remove chicken from pan and set aside.
  • In the same skillet, add minced garlic and toast for 30 seconds. Add orzo and stir to coat.
  • Pour in chicken broth and milk. Stir and bring to a gentle simmer. Cook uncovered for 8–10 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
  • Return chicken to the skillet along with broccoli florets. Stir to combine. Cover and cook another 4–5 minutes until broccoli is tender-crisp.
  • Turn off heat. Stir in cheddar (and mozzarella if using) until melted and creamy. Adjust seasoning with salt and pepper as needed.
  • Serve immediately with extra cheese, black pepper, or red chili flakes on top.

Notes

Use freshly grated sharp cheddar for best melt and flavor. Add broccoli toward the end of cooking to maintain its bright color and crisp texture. This dish thickens as it cools, so serve warm and creamy from the skillet. To reheat, add a splash of broth or milk to loosen the sauce.
