Ingredients

  • 3 ripe bananas (overripe, spotted)
  • 1/2 cup unsalted butter, melted
  • 3/4 cup sugar (white or brown)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 pinch salt
  • 1/2 cup chopped walnuts (raw or toasted)

Instructions

  • Preheat oven to 350°F (175°C). Grease a loaf pan.
  • Mash bananas in a bowl until smooth.
  • Mix in melted butter, sugar, eggs, and vanilla.
  • Stir in flour, baking soda, and salt until combined.
  • Fold in chopped walnuts evenly.
  • Pour batter into loaf pan and top with extra walnuts if desired.
  • Bake 55–60 minutes or until toothpick comes out clean.
  • Cool before slicing. Serve warm with butter or cream cheese.

Notes

Use very ripe bananas for the best sweetness and moisture.
Toast walnuts before adding for extra flavor.
Store at room temperature for 3 days, refrigerate up to 7 days, or freeze for 3 months.
